2 c. arugula
2 T. walnuts (or nut of choice)
2 garlic cloves
½ c. olive oil
⅓ c. parmesan cheese (sub nutritional yeast to make it vegan)
Salt and pepper to taste
Add nuts and garlic to food processor and blend. Add arugula and blend until smooth. Drizzle in olive oil and cheese and process until desired consistency is reached. Add salt and pepper to taste and water to dilute if necessary.
What can you do with arugula pesto? Use as a pizza or pasta sauce, spread over chips with feta cheese, or add as a condiment for a wrap or sandwich.
