Basil Pesto


2 c. basil

2 T. pine nuts (or nut of choice)

2 clove garlic or ½ oz garlic chives

½ c. fresh parmesan (sub nutritional yeast to make it vegan)

½ c. extra-virgin olive oil

Salt and pepper to taste

Finely grind nuts in a food processor. Add basil and ¼-½ t. Salt and process until finely chopped. Add olive oil, parmesan, and garlic, process until it’s a fine puree. Thin out with water until you reach your desired consistency.

What can you do with pesto? Pasta, pizza spread, dipping sauce, salad dressing, or marinade!
