8 oz cooked chicken (or other protein)
6 cups Wasabi Mix
1 oz Pea shoots or radish confetti
1 small cucumber, cut in ¼ inch slivers
4 large carrots, cut in ¼ inch slivers
Other veggies of choice (optional)
1 in fresh ginger peeled and cut into matchsticks
Handful fresh mint leaves, chopped
Handful fresh cilantro, chopped
½ oz thinly sliced garlic chives for garnish
Salt and pepper
Miso-sesame vinaigrette:
2 garlic cloves, minced
1 small shallot, diced
2 Tbsp tamari
2 Tbsp balsamic vinegar
2 Tbsp red or white wine vinegar
1 Tbsp light miso paste
1 Tbsp dark brown sugar
½ cup oil
2 Tbsp sesame oil
2 Tbsp toasted sesame seeds
