One Pot Weeknight Pesto Pasta


12 oz uncooked pasta

3 cups chicken broth

2 cups cooked chicken, shredded or chopped (optional)

¾ c. pesto

2 c. spinach

2 c. cherry tomatoes, halved

½ c. fresh mozzarella cheese balls, chopped in quarters

¼ julienned fresh basil

3 T. grated parmesan cheese


Add pasta and broth and cook until boiling, reduce heat and cook 8-10 minutes until al dente. Remove from heat and add the pesto, spinach, chicken, tomatoes, and mozzarella balls. Heat thoroughly and serve with basil and plenty of cheese on top.
